A grass-finished half and a grain-finished half at the same hanging price are not the same deal per pound of meat, because the grass-finished carcass started from a larger animal and will usually cut out leaner and slightly lower. 03Cooler shrink: hanging to chilled
A beef carcass is 70 to 75 percent water. As it chills for 24 hours and then ages for 7 to 21 days, water evaporates from the surface. Extension figures for the loss are 2 to 5 percent of hot carcass weight (University of Wisconsin; Mississippi State), with Maine citing 3 to 5 percent for typical facilities. Dry-aged carcasses lose more; long aging in an open cooler can push shrink past the top of that range, which is one reason plants and farms sometimes set a maximum aging period. 04Cutting yield: chilled carcass to package
The largest loss is bone and fat trim removed at the cutting table. The University of Wisconsin Extension's average carcass cutting yields are 71 percent of chilled carcass weight for bone-in, regularly trimmed retail cuts and 62 percent for boneless, closely trimmed cuts. Mississippi State's example lands at about 75 percent of hot carcass weight for a mixed order and notes that choosing mostly boneless cuts removes another 30 to 40 percent as bone and fat. Mississippi State's summary rule, that take-home is approximately 40 percent of live weight or 75 percent of hot carcass weight on a mixed cut sheet, sits inside the table's middle column. For context, NASS reports the 2025 average live weight of all commercially slaughtered cattle at 1,432 pounds, up 33 pounds from 2024, so the 1,400-pound row is closer to a typical feedlot steer than the 1,100-pound row; direct-market grass-finished animals more often land near the 1,100 to 1,250 rows.
06Why farms price on hanging weight
Hanging weight is the one number in the chain that is measured on a certified scale by a third party (the plant), recorded on a kill sheet, and available within hours of slaughter, before any decision the buyer makes can change it. Live weight depends on gut fill and on who owns a scale; take-home weight depends on the buyer's cut sheet, which the farm does not control. Pricing on hanging weight lets the farm be paid the same for the same carcass whether the buyer wants bone-in T-bones or boneless everything. It is a fair convention, and it is also the reason hanging-weight quotes look cheaper than they are. The processor uses the same number for its cut-and-wrap charge (see processing fee), so a single kill-sheet weight drives both bills.
07Convert any quote to true price per pound
Use one formula for every quote, whatever weight it is written on:
True price per pound = (animal cost + processing cost + your share of the kill fee) divided by take-home pounds.
Worked with USDA AMS's 2026 second-quarter survey averages for a half (hanging weight $5.76 per pound, processing $0.94 per pound hanging, kill fee $125 per head) on the 1,250-pound steer above: half hanging weight 388 pounds; animal $2,235; processing $365; kill fee share $63; total $2,662; take-home at the 67 percent mixed yield 250 pounds; true price $10.65 per pound. At the 62 percent boneless yield (232 pounds) the same half is $11.47 per pound; at 71 percent bone-in (265 pounds) it is $10.05.
For a live-weight quote, multiply live pounds by the price to get the animal cost, then proceed the same way. For an all-in quote that includes processing, multiply hanging pounds by the all-in rate (AMS average $7.71 for a half) and confirm whether the kill fee is inside it. The same three weights apply to every species, but the percentages differ because hogs keep their skin on the carcass and lambs are small-framed.
