These are the plants a farm uses to sell you meat by the cut, and the ones that will process an animal you buy as a half or a share. Records come from the USDA FSIS Meat, Poultry and Egg Product Inspection Directory (public, updated weekly) joined to the FSIS Establishment Demographic Data supplement, filtered to establishments with a slaughter activity in the 50 states and the District of Columbia. Plants that only process (no slaughter) are not included, nor are state-inspected plants, which each state publishes separately. Inspection status changes; confirm with the plant before hauling an animal.
