The rule comes from three extension sources that say the same thing. Oklahoma State: "one cubic foot of freezer space for each 35-40 pounds of cut and wrapped meat." SDSU: "the general rule is one cubic foot per 35-40 pounds of packaged meat." University of Maine: "approximately 1 cubic foot of freezer space per 35-40 lbs of beef," with a worked example of 560 lb of boneless beef needing 15 cubic feet for a whole, 8 for a half, and 4 for a quarter.

02Why the rule is 35 to 40 and not 50: packaging and bone

Water weighs 62 lb per cubic foot and meat is mostly water, so a solid block of beef would be about 60 lb per cubic foot. Packaged meat is not a block. Vacuum-sealed steaks and one-pound chubs of ground beef pack close to the top of the rule, near 40. Bone-in roasts, T-bones, short ribs, and whole chickens leave air between packages and pack near the bottom, 30 to 35. University of Minnesota Extension's figures are more conservative still: 142 lb of quarter beef in 4.5 cubic feet of a chest (about 32 lb per cubic foot) or 5.5 cubic feet of an upright (about 26), 50 lb of pork in 2.25 cubic feet, and 47 lb of lamb in 2.25 cubic feet.

The difference between Minnesota's numbers and the 35 to 40 rule is packaging and shape. A half beef cut mostly boneless and vacuum sealed fits in 6 cubic feet. 03Chest or upright

For bulk meat, the chest freezer wins on every measure except convenience. It holds more per rated cubic foot because there are no shelves, it holds cold longer when the power fails because cold air does not fall out when the lid opens, and it costs less to buy and to run. The upright wins on finding things, on floor space, and on not needing to unload the top layer to reach the bottom.

04Power outages: the 48-hour rule and what to refreeze

Two habits make the rule work. Keep the freezer full: when meat runs low, fill the space with jugs of water, which also gives you ice in an outage. And keep a thermometer inside, because the refreeze decision depends on temperature, not on how the packages feel.
