What does the custom-exempt flag mean?
Establishments that report custom-exempt slaughter or processing to FSIS under 9 CFR 303.1. A custom-exempt plant can process an animal the customer already owns, a whole, half or share bought before slaughter, and returns it in packages marked Not for Sale. This is the list behind every half-cow purchase.
Are state-inspected plants included?
No. This list is federal grants of inspection only. Oregon also runs a state meat inspection program whose plants can sell within the state; the state agency keeps that list, and the Oregon buying guide explains how the two systems fit together.
